Join us today as we dive into his powerful story! “What made you change at age 33? The spark was being denied that life insurance policy. My wife was pregnant with our second son. And, I wanted to, as a father and as a provider for my family, I wanted to make sure that my family would be taken care of if something happened to me. It wasn't like I was going through the formalities of getting a life insurance policy. Like, this is something that I was proud to be putting in place for my family so if something happened, they would be able to take care of themselves. And getting denied was like a ton of bricks coming down. Not only would they not give me the insurance, so I couldn't be proud to know that if something did happen to me, that my family would be able to take care of themselves, but the fact that they didn't think I was going to make it 20 years was even more hard to take because here I am holding an infant with an 18-month-old toddler running around. So my focus was eating more, eating more fruits and vegetables every single day. And I was letting that naturally crowd out all the other stuff that I should be eating less of. So I didn't start with a hard line on no cheese. I didn't start with a hard line on no bread or flour or those kinds of things. So glad that I did it this way. It wasn't necessarily as conscious. It's kind of what I heard. I was working in pharmaceutical research and I had more of an informatics role there where I was helping with data analysis and things like that to help bring new drugs to market. I was really excited about that when I started working there because I thought it was an opportunity to help people. So your pancreas is now in overdrive, overproducing insulin. And this is why the disease gets worse because the pancreas gets stressed. Type 1 diabetics is different, but they can also suffer from insulin resistance. With a Type 1 diabetic, their pancreas is no longer producing a sufficient amount of insulin. But, even the insulin they inject can get to the point where your body is rejecting it. The lifestyle and the diet is basically promoting resistance to the insulin. So when you go on the right lifestyle – low fat, whole food plant-based, intermittent fasting, exercising is a good thing. I encourage people to build their lean muscle. See it as cabinet storage for sugar. So it takes less insulin to do its job, whether you're injecting it as a Type 1 diabetic or your body is producing it. And that's what really leads you to reverse the disease because guess what? After finishing school and experiencing several miscarriages, she had three children in four years and tried to be Super Mom along with her full-time job as a cardiologist. Ultimately, her body broke down and she was diagnosed with rheumatoid arthritis. Months passed until she took control of her health—not with medicine, but with lifestyle. When she prioritized sleep, plant-based eating, and more gentle forms of exercise, she put her disease in remission. This is part one of our two-part interview with the fabulous and knowledgeable Dr. Aggarwal. We just couldn’t cover everything in one short hour. Buckle up and get ready to learn. “So there's a study that shows that if you have high genetic risk and you have a poor lifestyle, your risk of building plaque stays here. But if you have that same high genetic risk and you have a great lifestyle, you can reduce that risk by 50 percent. So similarly, if you look at somebody with low genetic risk, then that person has a good lifestyle, they will have maybe a risk of heart disease of this. But if they have a low genetic risk and a poor lifestyle, they will double their risk by 50 percent. So why are we not working on lifestyle? Such a big and important problem. One minute, they'd be peaceful; the next minute, they'd be violent. And as a little kid, I couldn't make sense of that. I couldn't figure out why they were so mercurial. But I looked at our animals because I grew up in this; we grew up in a basement apartment in Harlem, where there were so many animals. We had rescued lab rats, and we had dogs, and we had cats. We had this menagerie, and the animals simply made sense to me. You know, like, they never got angry without a reason. They never were violent. They never, they never seemed irrational to me, whereas the humans made absolutely no sense to me. It still continues to this day. Today's guest, Chef Del Sroufe, will teach you how to sauté, stir-fry, bake, and roast without oil or butter. With 33 years of cooking experience, Chef Del is an expert in oil-free cooking methods. At eight years old, he was creating dishes from whatever he could find in their kitchen. By thirteen, he was flaunting his culinary talents by preparing family dinners. Chef Del worked at a premier vegetarian restaurant in Ohio, The King Avenue Coffeehouse. He later opened his bakery, Del’s Bread, serving delicious vegan pastries and assorted delicacies. In 2001, he transitioned from his bakery business to start a vegan Personal Chef Service. In 2006, Chef Del joined Wellness Forum Foods as Executive Chef, where he continued the tradition of delivering great-tasting plant-based meals to clients. And if you ever join my weight loss group - I don't know, some people don't want to join it, it's a trigger for people - but you get to see this non-judgmental environment where we support each other, and we work together. I have people in my group who don't have any support from their real life, from their family, from their friends, from their spouses, from work, so the world is kind of antagonistic to what they're trying to do, and then they're trying to negotiate that. And when we get too much fat in the muscle cells, eating this kind of standard Western diet – meat, dairy heavy – some of that fat ends up in the muscle. So it clogs up, jams up the lock from the inside so that insulin can't unlock the door, and so your sugar levels start to go up. Throughout the episode, we delve into Dr. Gardner's research, uncover the truth behind diet trends, and hear his practical advice for achieving optimal health. “So the basic design is it's a randomized dietary trial. It happened to be identical twins, which was very unusual. I've never done it before. Identical twins are absolutely hilarious, but the two diet choices that they had to be willing to be part of either way, whichever way the coin was flipped, was a vegan or an omnivorous diet. And I want to clarify just for kicks here, a healthy vegan and a healthy omnivorous diet. There's a lot of bad ways to do any diet, and good ways, or better or worse, for any diet that you want to be on. When we looked at the metabolic risk factors, we had signed up on clinicaltrials.gov stating that LDL cholesterol was our primary outcome. And that dropped by about 15 milligrams per deciliter, more so in the vegans than the omnivores. We also saw a drop in insulin. We saw a drop in weight. Decrease in trimethylamine oxide. Their biological clocks got a little bit younger. So, they put one and one together. They are like, ‘Okay, bananas equal spikes; hence bananas are bad. Hence, fruits as a whole are bad.’ And then that is when the mix-up in avoiding all carbohydrates starts. They say ‘all carbohydrates are evil. I cannot go ahead and eat carbohydrates for the rest of my life,’ and they start avoiding the healthful carbohydrates, the ones that are full of fiber, like fruits, vegetables, the whole grains. A banana never gave anybody type 2 diabetes. The reason why you are spiking up after eating a banana is not due to the fructose and the fiber in the banana. Kathy also wrote the book Monkey Business: The Disturbing Case That Launched the Animal Rights Movement, which details the landmark Silver Springs Monkey cruelty case that led to the first conviction of an animal experimenter on cruelty-to-animals charges. We have a 95% failure rate in the development of drugs. And when you look at specific disease areas, you see it’s even higher. You look at neurodegenerative diseases, for example, it’s like 99% failure. The utter failure of drugs for Alzheimer’s and stroke, for a whole host of issues, is not working. So the idea that somehow science will come grinding to a halt is a false narrative put out by people who make their living experimenting on animals and by the National Institutes of Health, the U.S. funding agency that pays for more animal experiments than any other agency in the entire world. So you’ve got an endeavor animal testing that fails 90% of the time, but it gets half of the research budget of the National Institutes of Health.
